No fluff, this is solid information. Not flashy or full of pictures but lots of primary data to support. Surprisingly doesnt seem out of date considering. THe basics are known from long ago, diets come and go but digestion and metabolism remain much the same.

I bought this book for school. It was in great shape and for a great price.

This book introduces recent findings concerning the biochemical and molecular actions of food factors on bone metabolism in vitro and their preventive effects on osteoporosis in animals in vivo and human subjects.

The extraction methods applied in food processing are also examined, from fundamental theory to optimum practical application through using the relevant equipment, solvents, and the appropriate methods of process optimisation.
